24 Frittata recipe ideas you’ll love for a quick lunch or lunchbox filler
Italian Frittata is super versatile and can be the basis of many delicious recipes perfect for a quick bite, protein packed lunch or as as filler for a lunchbox.
You can make frittata with almost any leftover you have in the fridge. These are my favorite recipe ideas.

A fun idea: if you have scraps of leftover or want to present your frittatas in a fun way, you can use these recipes to make assorted egg muffins/ mini frittata tray. My kids love them! They are super easy to make and are perfect if you can’t decide which one of the recipes on this page to follow: you can make them all!
Frittata recipe (plain)
Plain Italian frittata is made with eggs, grated parmesan (optional), salt, pepper and just a dash of olive oil to grease your cooking pot. You can cook it on the stove top or bake it in the oven: in the first case, yo get a thinner, crispier result, while if you oven bake it you have a fluffier, airier result.
Personally, I find the baked version easier to make as it doesn’t require flipping it so if you are new to the world of frittata and have an oven, I’d go for that version!
The basic process is as follows:
In a bowl, mix your eggs, grated parmesan, a pinch or salt and a black pepper.
To cook on the stove: Heat a cast iron skillet on the hob; when hot, set the heat to medium, add a little bit of olive oil, then pour your mixture so it covers the bottom of the pan. Let it cook for a couple of minutes, then flip the frittata to cook the other side. Serve hot or cold.
Alternative flipping method: if you have difficulties flipping the frittata, you can use a clean plate to help you or you can cook it with a lid.
To cook in the oven: pre heath the oven to 180c/ 356 F. Grease an oven proof dish with olive oil, then pour your mixture into it and let it bake for 15-20 minutes, or until the eggs are fully cooked.
When adding additional ingredients: cook them as needed, then add them to the egg mixture. Only AFTER this passage, our them into the pan and cook with your method of choice.
Frittata di Pasta (pasta Frittata)
Add two your egg mixture your leftover pasta, parmesan, and fresh herbs like basil or parsley.
Spinach and Goat Cheese Frittata
Add two your egg mixture sautéed spinach, crumbled goat cheese and black pepper.
Veggie Frittata
This veggie frittata is a favorite in my household. It is super easy to make, flavourful and colorful and a fantastic way to feed protein and fresh veggies to the kids.

Bacon and Cheddar Frittata
A very British combination for this frittata variation!
Add two your egg mixture crispy bacon and sharp cheddar to add a kick to the smooth texture of the eggs, making a frittata reminiscent of the flavors of an English breakfast!
Cherry Tomato and Mozzarella Frittata
Add two your egg mixture fresh tomatoes, mozzarella (dry it well), and basil for a caprese-inspired frittata.
